Hi there! Corine here, thanks for stopping by my plant-based lifestyle blog!

A few things about myself:

– By day I’m a freelance graphic designer.

– I’m a “wife” (partner) to the most amazing man I’ve ever met, we are coming up on our 9 year anniversary soon.

– We do our best to live life to its fullest and to keep a positive outlook, no matter what life throws our way.

– I thrive on a plant-based lifestyle, and have my certification in Holistic Nutrition from SWIHA.

– I am a Level 2 Certified Vegan Chef, from Elaina Love’s Pure Joy Culinary Academy.

– I’m a 4 time marathoner, have run multiple half marathons, and a handful of trail races.

– I love to share my experiences and knowledge with people via this blog, so that I can assist others in their journey to optimal health. (If you want to read my whole fitness journey, it’s all here.)

– I have always enjoyed writing and journaling, because it helps me to calm my every rambling brain.

    You are now a pin up on my windows phone 🙂 I am a 38 yr. Old father of four,with loving wife.Unfortunately I have seizures and disabled.i can hardly do work,or play with my children.my seizures are caused from the layer around my brain has weakend,and high blood pressure causes my brain to swell,press against the inside of my skull,hence causing abnormal synapses in my brain resulting a seizure.To make a longer story short,I saw the episode of show on lwn with Joey and really loved your recipes although I didn’t get to see the whole show..since I can’t work ,play or feel as though I can’t provide I cook for the family,and sometimes three families for Sunday.We all know kids have a fear of vegetables,these recipies are a real help(not to mention my wife loves it when I surprise her with something new,it makes her feel special.) We need a little change for our health sake. I’m glad I caught the show…..Thank you

    • Hi Shane, I truly apologize for not replying to this comment sooner! It was one of those instances where I meant to reply later in that same day and got distracted! I hope you have been in good health over the past few months and that you have been able to try new recipes I’ve posted since May. Thank you for sharing a bit about yourself and your daily struggles. Your strength and motivation are inspiring to me.

    I love your site.

    I am an avid biker and I am thinking about running as well but have only done a few short distance runs. I went on a business trip to Germany a few years back with a co-worker who was a regular runner. After about two miles through downtown Stuttgart I was completely out of breath. I did not realize how out of shape I was until that moment. I was, at that time, eating a very yukky diet of meat, potatoes and lots of snack foods. Since then I have converted to a low fat raw vegan diet and although I have not attempted to run, I have been biking quite a lot. I have noticed that my performance has increased a huge amount. Last summer I did a 14 mile mountain trail ride through the woods and hills here in Michigan and was in better physical shape than my high school age son who rode with me.

    I just bought the book “born to run” by Christopher McDougall which I am just starting to read. I am hoping that between this book and your info I may be inspired to hit the trails again.

    hi jackie. posted on the almond bites page, but will post here. i am a dog mom too. have 5, and 3 fosters… and am an MD, so finding balance is sometimes a challenge, but eating right is a priority. Married an amazing man a yr ago, and he loves me so much he has foesaken meat for a veggie lifestyle ( tho i am now vegan). love to eat and cook and can’t wait to find more info… happy to help with any medical questions or issues you might have
