Walnut Cherry Banana Cookies

Down and dirty cookie recipe. No frills. No intro. Just the recipe. Oh, and these are AMAZING. Enjoy!!

Combine in a large bowl:
1 cup whole grain organic spelt flour
3/4 cup organic brown rice flour
1/4 cup coconut flour
1/4 cup almond flour (leftover from almond milk or store bought)
1/4 cup oat flour
(You just need 2.5 cups of flour really, but this is what I used and it tasted amazing!)
1/4 c. flaxseed meal
1 tsp. baking powder
1/2 tsp. Himalayan sea salt

Combine over heat so the oil doesn’t solidify:
1/2 c. 100% pure maple syrup
1/2 c. organic unrefined coconut oil

Add to syrup and oil:
1 mashed ripe banana
2 tsp. vanilla extract

Once all above ingredients are combined, mix in cherries and nuts:
1/2 cup cherries
1/2 cup chopped walnuts

Scoop onto cookie sheet and bake at 350ยฐF for 13 to 16 minutes, or until golden brown on the edges and slightly golden on top. (These will rise more than spread, so they are ok to put closer together on the pan.) Makes about 20 cookies. Try not to eat them all at once. ๐Ÿ™‚

  1. Wow these look fantastic!! Did you soak the walnuts first?

    • No, I didn’t ๐Ÿ™‚ I don’t seem to have any issues digesting nuts, so I don’t typically soak them unless I’m making almond milk.

      • There are other benefits of soaking nuts actually! Before a nut is soaked it remains dormant and by soaking them they become awakened or sprouted! They can then release their information such as nutrients and protein contents!

        • I’m totally aware of all of the benefits. ๐Ÿ™‚ I guess I’m just lazy when it comes to soaking allllll the nuts I eat, especially when baking with them. I think I should try to do it with the ones I put on salads more often, since I plan ahead on those, but baking is usually a spur of the moment thing for me when I’m craving something sweet! And believe me, I thought about doing a large batch of nut soaking and then dehydrating them the other day after we talked about it, but I just didn’t want to take the extra time to do it. I have to pick and choose my battles these days, and this is one that only gets done half the time, and I’m ok with that. ๐Ÿ™‚

          • Yeah I totally get it! I have to pick my battles too lol! Luckily for me it’s just been a habit change, that when I buy new walnuts and almonds, I automatically soak and dehydrate them before they go into any containers to use! #onthetoodolist #onethingatatime #onehabitatatime

  2. Here’s a simple cookie recipe for Almond Butter Cookies:

    Ingredients:
    ยฝ cup rolled oats, 1 tbsp almond butter, 1 scoop vanilla Shakeology (or other brand of protein powder), 1 egg white, 2 packets Stevia (for taste), ยฝ tsp baking powder, Few dark chocolate chips (optional)
    Directions:
    1) Preheat oven to 350. 2. Combine all ingredients together in a mixing bowl and mix with clean hands. 3. Shape the dough into golf-ball-sized balls. Place onto cookie sheet, about an inch-and-a-half apart. Bake for about 10 minutes. Serve.

    Note: If you are not a Stevia fan, try coconut palm sugar!
