Day 3 Volume II
Today was a very laid back and quiet day in the Zucchini Runner household. We didn’t do any workouts and we slept in. π Glorious. We did enjoy an extremely large breakfast that took quite some time to create… but that’s what Sunday’s are for! Of course I needed a cup of coffee to drink while cooking; it had some of my homemade almond milk in it too. As a side note, I glazed this mug in my ceramics class! I can’t take the credit for the mug itself, as it was provided by my teacher, but I did the leaf and glaze. It is one of my favorite mugs!
We made gluten-free banana walnut pancakes with white bean and lentil links, served with a side of homemade applesauce (from the freezer) and some fresh cherries! (680 calories, 123 carbs, 21 g fat, 25 g protein)
I took my vitamins with a mixture of homemade almond milk and Naked Juice’s Superfood. (98 calories, 17 g carbs, 3 g fat, 2 g protein)
For a late lunch, while I did some freelance work, Mr. Zucchini Runner whipped up some homemade hummus and broccoli sauteed with onion and a pan fried Amy’s Quarter Pound veggie burger. It hit the spot! (398 calories, 52 g carbs, 8 g fat, 29 g protein)Since everything about this day was late (waking up, eating, etc) we didn’t really do a full dinner. Instead, I had a bunch of snacks. π A handful of inka corn before heading out the door to get some groceries. (65 calories, 11 g carbs, 2 g fat, 1 g protein)
While at the store, I realized this sounded like a perfect “dinner”… then found out it had milk powder in it, but I don’t worry TOO much about that amount of dairy in things – plus I was starving. (200 calories, 17 g carbs, 13 g fat, 7 g protein)
I was still hungry when I got home, so I ate a banana with homemade peanut butter on each bite. I went over my calorie goal for the day (since I didn’t work out, it’s pretty low) but I was hungry so my body obviously needed it. (200 calories, 30 g carbs, 8 g fat, 6 g protein)Grand totals for the day were:
Calories 1,641
Carbs 250 g
Fat 55 g
Protein 70 g
Sugar 82 g
Now I’m all caught up for my journaling. Not doing the first write up on the first day really threw things off! π Ah well. If anyone has any questions, please don’t be shy to ask them in the comments below!

Hi! i love the kind bars when i can afford to get them,i made peanutbutter granola bars for the first time last night-recipe came out the book fork over knifes(my new favorite plant based book) i think i shouldve left them in the oven a bit longer but i will know for next time. i wanted to ask you do you know of a good shampoo & condtioner that doesnt have all that added stuff in it thats not good for your hair? i tried appple cider vinegar for conditoner & it worked well i just dont know how good that can be for your hair?
I need to check out that FOK recipe! Sounds like exactly what I need! I buy Clif Peanut Butter bars for my work snack, but would love to make my own with less sugar. It’s funny you should ask about the shampoo and conditioner because I’ve been on a search for that myself! I like Alba brand so far and I’ve just started a bottle I got from Costco. No nasty chemicals. I’ll need to check the name though and get back to you. π I’ve never tried apple cider vinegar for my hair, I know it’s suppose to be good for a ton of things though!
So I can expect a recipe for those pancakes when?

Daisy, I just went to the site and that is the shampoo I got from Costco!! Hahaha π It is a shampoo + body wash. It lathers differently than any other shampoo I’ve ever had, hard to describe. But I like it otherwise!

Have you tried Picky Bars for a snack? They are made by runners for runners, are totally organic, plant based, no dairy. Had to order them online though I don’t think they are carried locally yet.
