We practically have zero fresh groceries in our house this morning. But I’m so sick of oatmeal for breakfast! I decided to get a little creative with some pancakes this morning and just use what I had on hand. I also did not intend to use spelt flour in these, but we were all out of whole wheat flour and I did NOT want to use white flour. As a result, these turned out a little skinny, sort of like crepes. It reminded me of the crepes my Grandma would make us when we were growing up.
1 cup old fashioned oatmeal
1 cup spelt flour
2 tbsp coconut sugar
4 tea baking powder
1/4 tea salt
1 1/2 cups rice milk
1/2 of ripe banana mashed (~1/4 cup)
1/2 tea vanilla extract
1/2 tea almond extract
1/4 cup dried blueberries (some additional for topping too)
